Online bakeries are experiencing a sales boom thanks to their DTC approach and limited edition drops. The pandemic spurred a number of food trends, whether it be social media worthy recipes or virtual restaurants, but one category that is experiencing considerable success are online bakeries. And though this model has been around since before the pandemic, traditional bakeries that have embraced the online DTC model since the pandemic are thriving. Bougie Bakes is an L.A.-based online bakery that specializes in sugar-, gluten-, and dairy-free desserts, and notes it experienced a 700% increase in YoY sales in 2021; Last Crumb takes a limited edition drop model approach to its cookie boxes, building hype with cheeky flavors to stir up buzz and sales; and this month, NYC-based Levain Bakery (which opened its first shop in 1995) reports it experienced a 200% YoY increase in online sales. The DTC and limited edition approach has helped online bakeries build loyal followings on social media and IRL, with Last Crumb standing out in particular for its weekly drop cadence. (Modern Retail)
