Cauliflower is trending, as companies turn it into rice, pizza crust, pasta, brownies, and more. Nielsen found that sales of substitutes for simple carbs like riced cauliflower and spiralized zucchini rose to $47 million this year, with cauliflower substitutes alone making up $17 million of that total. Sales of refrigerated cauliflower products rose 108%, and some Trader Joe’s stores even had to set a two-bag limit on how many bags of riced cauliflower its customers could buy.
