Spanish-based food tech startup Mimic Seafood is tapping into plant-based fish. Back in 2019, YPulse said that Gen Z and Millennials were the ones fueling the fake-meat food rush, and the pandemic accelerated the trend. A report for the EU’s Smart Protein project found that Europe’s plant-based food industry grew 49% between 2018 and 2020, reaching €3.6 billion across 11 countries. Meanwhile, YPulse research shows that 47% of 13-39-year-olds in the U.S. say they drink plant-based beverages and/or eat plant-based meat regularly while another 23% are interested. With so much growth in the space, brands are jumping on board across the world and creating new plant-based products. Now, Spanish brand Mimic Seafood is making substitute fish products out of dehydrated tomatoes, adding another option to the expanding European plant-based market. (Bloomberg)
