Vegan brands are winning over the next generation of grocery shoppers on college campuses. Yale added Beyond Meat to student meal plans, UC Berkeley and Cornell both stock Just Inc.’s egg-free mayonnaise, and more college campuses are making vegan options available for a generation that’s increasingly interested in cutting back on animal products. Though they’re competing with industry giants (like Kellogg Co.’s Morningstar Farms), the vegan upstarts are betting they’ll become a habit young consumers will continue after school's over—and judging by Beyond Meat’s IPO, investors agree.
