A “flexitarian” diet is being adopted by more and more health-conscious Millennials. Flexitarians are semi-vegetarians, so they can eat meat, but stick to a largely plant-based diet. While many become vegetarians and vegans for moral reasons, flexitarian diets give Millennials who are more interested in health another diet option. At the same time, environmental concerns are also an appeal: less meat-eating means cutting down on livestock consumption as well. (WSJ)
