Insect protein could be the new, ethical replacement to meat—and major brands are buzzing. Investors are exploring options other than trending fake meat, with Barclays predicting the insect market will metamorphosize into an $8 billion industry by 2030. Insects would start at high-end restaurants and trickle down to the average consumer—following the same course as sushi. So far, Tyson has cricket protein pegged as a trend to watch, while Nestle is conducting research and development. (Eater)
