Local and sustainable restaurant chain Sweetgreen is leaving cash behind in 2017. Becoming one of the first chains to do so, the brand will implement a no-cash policy at all of its locations, which according to the co-founder won’t have a significant impact on business: “Cash has become such a smaller piece of our tender…When we opened nine years ago, it was 40 percent. Now, all stores are between 10 percent and 15 percent.” With one-third of its business coming from mobile, the chain has always embraced the advancements of technology and hopes the change will make them “more like Uber” in terms of speed.
