Grocery stores want in on ghost kitchens. Virtual dining chains exploded during the pandemic with the iconic MrBeast Burger and other food brands launching virtual restaurants, and grocery stores like Walmart and Kroger are the latest to join. Walmart has announced a partnership with Ghost Kitchen Brands to open 50 virtual kitchens and Kroger announced a similar plan to step into the virtual restaurant space. Last year, online grocery sales experienced 10.2% year-over-year growth in 2020 compared to 3.4% growth in 2019 according to Mercatus. Grocery stores are now experiencing a decrease in digital sales, and they see ghost kitchens as their answer for keeping their online sales momentum growing post-pandemic. Walmart and Kroger’s virtual restaurant concepts let shoppers order pre-made meals and pick them up or have them delivered—allowing them to serve shoppers based on their current needs.
